Tidbits Rice Salad Wraps

For Wrap Condiments
1    Cup     Sinlek Rice
2    each    Mackerel, deep-fried and deboned
1    each    Lime, small diced
1    bulb    Ginger, small diced
2-3    clove    Garlic, sliced
1    bulb    Shallot, small diced
¼    cup    Peanut, roasted
3-4    each    Thai bird chilies, finely sliced Salad leaves for wrappers

For Hot & Sour dressing
1    Tbsp    Garlic, finely minced
¼    tsp    Thai bird chilies, finely minced
3    Tbsp    Fish sauce
6    Tbsp    Lime juice
1    Tbsp    Palm sugar
1    Tbsp    Sugar
3    Tbsp    Water

how to cook

1. To cook Sinlek rice by the electric rice cooker, place the rice and stock into the cooker pot and follow the direction from the manufacturer.

2. To make dressing, combine 2 types of sugar with water and heat to dissolve. Cool down. Mix the rest of ingredients into the cool syrup. Correct seasoning if needed. Transfer to a serving bowl.

3. To serve the tidbits, arrange all condiments onto the serving platter and serve.

4. To eat the tidbits, place the salad leaf on your palm and take a single piece of each condiment onto the bite. Drizzle with dressing and enjoy.
